Anchovies Sambal

Yun had learn some precious recipe for traditional malay cuisine. Hereby, share with Yun's readers the way to make sambal ikan bilis (anchovies sambal).

The main ingredients are; 500 g of onions, 500g of anchovies, 100g of red chilies (could add on or reduce depend on how hot u want the sambal to be), chilies paste and sufficient oil for frying the onions.

First of all, unskin the onions and cut it into small pieces. Pound it so that it become soft.

Second, pound the cleaned anchovies
Thirdly, pound the dried red chilies (perferbly cili padi)
and eventually the chili paste

After prepared all the ingredients it's time to cook sambal. It's extremely easy.
1. Heat up the oil and fried the onions till it is yellowish (do not fried till it's crispy). Drain the oil.
2. Add in pounded anchovies, cili padi and the fried onion into the wok and cook until it's harmonily mixed.
3. Add in chili paste cook until it boil.
4. Add in salt and sugar for the taste. Depend on your likes.

That's all.. nice smell, yummy anchovies sambal!!! It can be stored for about 3-4 weeks and can be eaten with rice and other dishes.
